My Grandma's Prime Rib

Prime Rib

Ingredients

​

2 1/2 lb prime rib roast with the bone in

2-3 tablespoons salt

olive oil

​

Instructions

​

1. The night before you are having the roast rub it down with olive oil then your salt.

2. let the roast dry brine overnight in your fridge uncovered on a cooling rack.

3. The next day roast your prime rib in a roasting pan for 35-55 minutes until the thickest part of the meat reaches an internal temperature of 120 degrees fahrenheit.

4. Then turn on your broiler until the beef has formed a crust after 2-3 minutes.

5. rest for 15-30 minutes.

6. Serve with a cup of hot au jus sauce.

Au jus sauce

​

Ingredients 

​

1 tablespoon all purpose flower

1 Box of beef stock

The fat and fond on the bottom of the roasting pan

​

Instructions

​

1. pour out around half of the fat in your roasting pan then put it on your stove.

2. place it on high heat and add in your stock.

3. scrape off the fond at the bottom of the roasting pan .

4. Serve a steaming cup of au jus sauce with your perfectly cooked Prime Rib.
