Lamb Lollipops: About

Pop’s lamb lollipops with mint jelly

Ingredients 


1 Frenched rack of lamb

Olive oil

Salt

Pepper

Garlic powder


Instructions 


1. Lightly oil the rack of lamb with some olive oil then season with salt pepper and garlic powder.

2. Set your oven to 350 degrees fahrenheit.

3. Add olive oil to a hot pan and sear the rack on the side with the bone curving out.

4. Once there is a nice golden brown all over put into the oven until it reaches an internal temperature of 130 degrees fahrenheit.

5. Rest for 10 minutes and serve.


Mint Jelly


Ingredients


1 lemon

1 cup packed mint

2 cups water

1 ½ cups of sugar

1 pack of pectin


Instructions


1. In a blender add your mint and water then blend.

2. Add into a pot on medium high, the blended mint water.

3. After boiling and stirring for about 5 minutes add in the juice of your lemon and your sugar.

4. Add in your pectin and boil for another 5 minutes.

5. Next strain out any excess mint leaves.

6. Add the liquid to a bowl and keep in your fridge until solidified.

7. Serve with your perfectly cooked lamb.
