My cousin Maddie’s Gluten Free Chicken Noodle Soup.
Ingredients
3 bone in skinless chicken thighs
2 large carrots
2 celery stalks
1 large white onion
1 bay leaf
Salt
Pepper
2 cloves of garlic
Olive oil
3 cups of water
Noodles of your choice
Instructions
1. Begin by chopping your onion, celery, carrots then mince your garlic.
2. In a large pot saute your garlic in olive oil for around 3 minutes then add in your chicken.
3. Brown the chicken then add in the rest of your vegetables.
4. Sweat them out for about 5 minutes then add in your water.
5. Add in your bay leaf and simmer for 1 ½ hours.
6. Remove the chicken and bay leaf from the pot.
7. Use 2 forks to shred the chicken then add the chicken back to the pot
8. Season to taste then add in the noodles.
9. Cook the noodles to your preferred doneness and serve.
